Steamed Cornbread


In contrast to the Western oven, cakes have been made by a steam bath in an "oven" for centuries in China. Here, oven-made cornbread is successfully duplicated by steaming.

250 ml (1 cup) corn meal
250 ml (1 cup) flour
80 ml (1/3 cup) sugar
80 ml (1/3 cup) butter, shortening or vegetable oil
250 ml (1 cup) milk
2 eggs
20 ml (1-1/2 tbsp) baking powder
1.5 ml (1/4 tsp) salt


Preparation

1. Sift dry ingredients into a bowl.
2. Add milk, egg, and softened butter or oil.
3. Beat the mix a smooth batter for about 1 minute; do not over beat.
4. Pour the mix to a steam pan lined with wax paper at the bottom.
5. Place the pan in a hot steam "oven" and bake for about 30 to 45 minutes.

 

Steamer Note:
Some large Chinese stores might sell steamer baskets and tell you how to use a wok and the baskets. Or, some rice cookers might come with a steamer kit. If nothing available, you can use a deep pot for pasta cooking. Stack neatly some stainless forks at the bottom in one or several layers, one layer of 4 forks. Fill the pot with water just beneath the top layer of forks. Use high heat to boil the water. Place a common baking pan (with the batter) at the top of the forks, allowing sufficient space between the edge of pan and the wall of the pot. Check the hot water not boiling into the baking pan. Cover the pot with the lid. Finally, use the usual baking method to check if the cake is done - poke using a chopstick or a long knife to the center of the cake.


Steamed Hemp Cornbread


Hemp protein powder is made of the seeds from the hemp plant, Cannabis sativa L. Hemp and marijuana belong to the same family but the two plants are different. Most noticeably, marijuana contains 20% THC (delta-9-tetrahydrocannabinol) while hemp has less than 1% THC. It is impossible to get high by digesting a small quantity of hemp protein powder.

Hemp protein powder contains absorbable 20 amino acids and Omega fat. It is a good vegetable protein and can be used for dieting and for tuning muscle. Digesting the powder is known safe and has no reported ill effects. Some athletes us the protein powder as a nutritional supplement and mix it with juices and milk. The powder has a natural nutty flavour and can be used in baking at 25% hemp to 75% flour ratio.

120 ml (8 tbsp) hemp protein powder
80 ml (1/3 cup) sugar
80 ml (1/3 cup) butter, shortening or vegetable oil
250 ml (1 cup) milk
2 eggs
20 ml (1-1/2 tbsp) baking powder
1.5 ml (1/4 tsp) salt
20 ml (4 tsp) ginger
5 ml (1 tsp) green cardamom powder
80 ml (1/3 cup) raisin (optional)


Preparation

Mix all dry ingredients in a bowl. Add all wet ingredients the same way. Use the same steaming method, and cook for same 30 minutes or so.
